The name literally means "apple slices," yet most modern æbleskiver contain no apple at all.
Æbleskiver are round, fluffy pancake balls cooked in a special pan with hemispherical wells, turned with a knitting needle or skewer as they puff into golden spheres. Christmas market stalls sell them warm in paper bags, dusted with powdered sugar and served with a side of raspberry jam for dipping.
Why it's made this way: The name comes from older versions of the recipe where a piece of apple was tucked into the center of the batter; most vendors today drop the fruit but keep the name as a nod to the dish's origin.
