Casabe is documented in the Dominican Republic since before Columbus's arrival, made by Taíno communities from bitter yucca, and Azua's roadside stands still bake it the traditional way on large flat griddles.

A large, thin, unleavened cassava flatbread, dry and cracker-like, split and topped with sliced avocado, salt, and sometimes fried cheese, sold from small roadside stands along Azua's highway.

Why it's made this way: Azua sits in a yucca-growing zone, and its highway stands are one of the country's most visited stops specifically for fresh casabe, keeping this Taíno-era bread and pairing alive as a signature local snack.
