Chimichurri (Chimi)

It's named after the Argentine herb sauce but is actually a griddled meat sandwich — the two share nothing but a name.

A seasoned ground beef or pork patty is grilled on a flat griddle and tucked into a soft roll, typically pan de agua, then topped with shredded cabbage, onions, and a ketchup-mayo blend known locally as salsa golf. It's sold from small carts and food trucks at night.

Why it's made this way: It grew out of mobile street carts serving cheap, fast food to people leaving bars and clubs late at night.
