Yaroa

Yaroa — street food from Santiago, Dominican Republic

Yaroa was invented in Santiago in the early 2000s at a street cart and only spread nationwide afterward, making it one of the few Dominican street foods with a documented birthplace and rough birth decade.

A late-night cart dish of shoestring fries or mashed plantain layered with melted cheese, seasoned ground beef or chicken, and a garlic-mayo-ketchup sauce, baked or torched until the cheese browns.

Why it's made this way: Its origin is pinned specifically to Santiago's street-cart scene, where it remains a defining after-dark snack before spreading to the rest of the country.
