Yaroa is most closely linked to Santiago's university crowd, sold late at night from carts near the campuses, though its exact birth date is still argued over.
A late-night cart dish of shoestring fries or mashed plantain layered with melted cheese, seasoned ground beef or chicken, and a garlic-mayo-ketchup sauce, baked or torched until the cheese browns.
Why it's made this way: Its origin is pinned specifically to Santiago's street-cart scene, where it remains a defining after-dark snack before spreading to the rest of the country.
