The crust here isn't flour or breadcrumbs — it's ground pumpkin seeds (pepitas), a technique tied directly to the fishing communities that live along the Congo River in Kisangani.

Tilapia fillets are pan-fried on a bed of ground pumpkin seeds, garlic and sliced plantain until the seeds form a fragrant, faintly crisp crust around the fish, a specialty of Kisangani's riverside fishing communities.

Why it's made this way: Pumpkin and squash seeds are dried and ground into flour across the Congo Basin as a thickener and flavoring agent, and Kisangani's fishing villages built that everyday pantry staple directly into how they cook their daily catch.
