"Liboke" isn't really a dish name — it's a cooking method, literally 'wrapped,' and it works on nearly anything, not just fish.
Fresh fish is seasoned with tomatoes, onions, garlic, chili, and herbs, then wrapped tightly in banana leaves and grilled or steamed over coals until the parcel is smoky and tender. It's sold whole and still tied by market stalls and riverside vendors across Kinshasa, unwrapped at the table or on the street.
Why it's made this way: Banana-leaf wrapping predates refrigeration as a way to cook and carry fish along the Congo River — it keeps the flesh moist, needs no separate dish, and doubles as its own packaging, which is why the technique stuck for both fishermen and street sellers.
