Shrimp only became a mainstream Alexandrian street order in recent decades — older residents recall when fishermen mostly discarded it as bycatch.

Shrimp pulled from the Mediterranean that morning is coated in seasoned flour and deep-fried, or simply grilled over charcoal, then served with lime and a dish of spicy tahini for dipping. Alexandria's seafood kiosks near the harbor and Corniche weigh it live before cooking it to order.

Why it's made this way: As Egypt's main Mediterranean fishing port, Alexandria built a seafood-forward street food culture that inland Cairo never fully developed.
