Many Alexandria seafood spots work like a fish market: you choose your shrimp and fish raw, it is weighed, and then grilled or fried as you like.

Shrimp from the Mediterranean is coated in seasoned flour and deep-fried, or simply grilled over charcoal, then served with lemon and a dish of tahini for dipping. Alexandria's seafood places near the harbor and Corniche let customers pick raw shrimp from ice and weigh it before cooking it to order.

Why it's made this way: As Egypt's main Mediterranean fishing port, Alexandria built a seafood-forward street food culture that inland Cairo never fully developed.
