Vendors along the Corniche often grill sardines whole — head, tail and all — over open charcoal within sight of the boats that landed them that same morning.

Fresh Mediterranean sardines are salted, skewered or laid straight on a charcoal grate, and cooked whole until the skin blisters, then served with lemon, bread, and a simple salad. Alexandria's waterfront seafood kiosks sell them by the plate as one of the cheapest ways to eat straight-off-the-boat fish.

Why it's made this way: Sardines are one of the most abundant catches along Alexandria's stretch of Mediterranean coast, making grilled sardines a fixture of the city's working harbor food culture rather than a tourist specialty.
