Renga (Smoked Herring)

Unlike its fermented cousin feseekh, renga is smoked at high heat rather than fermented — a safer process that still delivers an intensely salty, smoky bite.

Herring is salted and smoked until firm and deeply flavored, then served sliced with onion, oil, and lemon, or mashed into a spread with tahini. Delta market towns sell it alongside feseekh from the same seasonal fish stalls in the weeks before Sham el-Nessim.

Why it's made this way: Renga developed as the safer, smoked alternative to fermented feseekh, giving Delta families the same festival flavor without the fermentation risks, and it remains a fixture of the same spring stalls.
