The herring in renga doesn't come from Egyptian waters at all; it is a North Atlantic fish, imported and smoked, yet it has become a fixture of one of Egypt's oldest holidays.

Herring is salted and smoked until firm and deeply flavored, then served sliced with onion, oil, and lemon, or mashed into a spread with tahini. Delta market towns sell it alongside feseekh from the same seasonal fish stalls in the weeks before Sham el-Nessim.

Why it's made this way: Renga sits beside feseekh on Sham el-Nessim tables, and many families who find feseekh too strong, or worry about the risks of badly fermented fish, buy smoked herring from the same spring stalls instead.
