Its name simply means 'broken into pieces,' referring to the toasted bread torn up and layered at the bottom of the dish before the rice and meat go on top.

Crisped or toasted flatbread is layered with rice, slow-cooked lamb or beef, and a garlic-vinegar sauce spooned generously over the top. In Aswan's Nubian villages it's prepared for guests and festive occasions, and vendors near the Nubian villages now serve smaller portions to visiting travelers.

Why it's made this way: Considered a specialty of the Nubian communities around Aswan, fatta is traditionally made to mark celebrations such as a first pregnancy or a wedding, carrying deep hospitality symbolism in the region.
