Luxor's countryside is dotted with distinctive cone-topped pigeon towers built specifically to raise the birds for this dish.

Whole pigeons are stuffed with seasoned rice or freekeh (smoked cracked wheat), onion, and herbs, then grilled over charcoal or slow-braised in a clay pot until the skin turns deep brown. Luxor eateries and market stalls serve it whole, still stuffed, as one of Upper Egypt's signature grilled dishes.

Why it's made this way: Villages across Upper Egypt have raised domesticated pigeons in purpose-built towers for centuries, making hamam mahshi one of the clearest examples of a dish shaped directly by local farming architecture.
