The cone-topped mud pigeon towers seen across the Egyptian countryside were built as much for the birds' droppings, collected as fertiliser, as for their meat.

Whole pigeons are stuffed with seasoned rice or freekeh (smoked cracked wheat), onion, and herbs, then grilled over charcoal or slow-braised in a clay pot until the skin turns deep brown. Luxor eateries and market stalls serve it whole, still stuffed, as one of Upper Egypt's signature grilled dishes.

Why it's made this way: Villages across rural Egypt, including Upper Egypt, have raised pigeons in purpose-built mud-brick towers for centuries, which keeps the birds cheap and plentiful enough to be a regular festive dish.
