Samak Mashwy (Grilled Nile Fish)

The fish is often served within an hour of being pulled from the river, cooked at stalls set up right along the Nile's banks in Aswan.

Nile tilapia or perch is scaled, gutted, seasoned simply with salt, pepper, and local herbs, then grilled or fried whole over an open flame at riverside stalls. In Aswan and Luxor it's served with rice or salad and a squeeze of lemon, eaten within view of the water it came from.

Why it's made this way: The Nile has fed Upper Egypt's fishing towns for millennia, and grilling the day's catch riverside remains one of the most direct, unbroken food traditions in the country.
