Genfo

Stirring the flour into boiling water without lumps takes real arm strength and is often treated as a small point of cooking pride in the household.

Genfo (also called ga'at) is a thick, hand-stirred porridge of roasted barley or wheat flour, mounded into a smooth dome with a well pressed into the center and filled with melted spiced butter and berbere.

Why it's made this way: Genfo is traditionally cooked for new mothers and honored guests because it's considered easy to digest and strengthening, and it remains a common hearty breakfast across highland Amhara towns.
