Gored Gored — street food from Amhara, Ethiopia

Unlike kitfo, which is finely minced and pre-seasoned, gored gored is deliberately left plain and cubed so diners can season each bite themselves at the table.

Gored gored is fresh raw beef cut into small unmarinated cubes, served with mitmita chili powder and awaze paste on the side for dipping, sometimes flash-warmed in butter just before serving.

Why it's made this way: Eating beef raw at its freshest is a mark of trust in the butcher and a point of pride in highland Amhara feasting culture, where a freshly slaughtered ox is often shared among an entire gathering the same day.
