The shekla dish is often brought to the table still audibly sizzling, with the meat continuing to cook slightly from residual heat.

Shekla tibs is sautéed cubes of beef or lamb cooked with onion, garlic, rosemary and berbere, then brought to the table still sizzling in a traditional black clay dish called a shekla, which keeps it hot as it's shared.

Why it's made this way: The clay-pot presentation turns an everyday sautéed meat dish into tableside theater, and it's become one of the most popular ways to order tibs in highland hotels and restaurants around Gondar.
