Despite Harar's fame for fiery berbere, signature stews like hulbet marakh are often built on a milder tomato base rather than the deep red chili paste used in Amhara and Tigray cooking.

Hulbet marakh is a rich stew of meat and potatoes simmered in a tomato-based sauce loaded with fresh coriander, setting it apart from the darker berbere stews found elsewhere in Ethiopia. It's ladled over rice or scooped up with bread.

Why it's made this way: Harari cuisine leans on tomato and coriander far more than the rest of highland Ethiopia, a legacy of the centuries of spice trade that passed through the city.
