Marqaa is simply the Oromo name for the same style of porridge Amharic speakers call genfo or ga'at, showing how one dish carries different names across Ethiopia's regions.

Marqaa is a smooth barley porridge, the Oromo counterpart to genfo, formed into a mound with a hollow center filled with dhadhaa, Oromo spiced butter. It's stirred continuously over the fire until thick and glossy.

Why it's made this way: Marqaa carries strong ceremonial weight in Oromo culture, especially as a food prepared for new mothers, since it's considered gentle, restorative and quick to prepare after childbirth.
