Bulla, kocho and the corm vegetable amicho all come from the very same enset plant, harvested and processed into three completely different foods.

Bulla is a fine, pale starch extracted and dried from the pulped enset plant, then cooked into a thin porridge or thicker flatbread, distinct from the coarser fermented kocho made from the same crop.

Why it's made this way: In Sidama and Gurage households, bulla is traditionally offered to guests, the elderly, or anyone feeling unwell, since it's considered light, easily digestible and quick to prepare.
