The greens in gomen kitfo are traditionally cooked completely plain, without spice, specifically so they can act as a cooling counterpoint on the same plate.

Gomen kitfo pairs minced spiced kitfo with warmed, finely chopped collard greens (gomen) and crumbled ayib cottage cheese, balancing the richness of the raw beef in one combined plate.

Why it's made this way: Serving kitfo alongside gomen and ayib is standard Gurage table practice, since the mild greens and tangy cheese are meant to offset the heat of the mitmita spice used in the meat.
