Despite the name, gomen kitfo contains no meat at all; 'kitfo' here refers to the fine mincing and spiced-butter seasoning, not the beef.

Gomen kitfo is collard greens (gomen) boiled, squeezed dry and chopped very fine, then mixed with niter kibbeh spiced butter and mitmita in the same way as meat kitfo. It's often served with ayib cottage cheese and kocho.

Why it's made this way: The Gurage apply their kitfo technique to greens as well as beef, and gomen kitfo is a traditional part of the Meskel festival table, when families gather in their home villages.
