Kitfo

Skilled kitfo butchers mince the beef entirely by hand with a two-handed knife technique, producing a texture considered impossible to replicate with a meat grinder.

Kitfo is beef minced extremely fine, then warmed through — never fully cooked — in mitmita chili powder and niter kibbeh spiced butter. It's traditionally served with kocho, ayib cheese and warm greens.

Why it's made this way: Kitfo originates with the Gurage people of south-central Ethiopia, whose intricate mincing technique and butter-forward seasoning set it apart from other Ethiopian raw-meat dishes like gored gored.
