Kitfo is ordered by doneness: tere (raw), leb leb (barely warmed) or yebesele (cooked through), and traditionalists insist on the raw version.

Kitfo is beef minced extremely fine and mixed with mitmita chili powder and warm niter kibbeh spiced butter, then served raw, just warmed or fully cooked. It's traditionally served with kocho, ayib cheese and greens.

Why it's made this way: Kitfo originates with the Gurage people of south-central Ethiopia, whose intricate mincing technique and butter-forward seasoning set it apart from other Ethiopian raw-meat dishes like gored gored.
