Cooks judge a good zigni by how much of the fat rises to a shiny red layer on top, a sign the berbere has been properly cooked down rather than added late.

Zigni is a deep-red beef stew built on a heavy base of berbere and slow-cooked onions, typically hotter and less sweet than the doro wat found further south. It's ladled generously over injera for a shared family meal.

Why it's made this way: Zigni belongs to the shared Tigrinya-speaking culinary tradition that spans the Tigray region and neighboring Eritrea, a cuisine distinct in its spicing from the rest of Ethiopia.
