Duruka Vakalolo

Duruka is a wild relative of sugarcane whose tender flowering stalk is prized as a vegetable, and it appears at Suva's market for only a few weeks a year, sold tied in bundles.

The young flowering stalks of duruka, sometimes called Fiji asparagus, are boiled in thick coconut cream with sliced onion and a little ginger until tender, making a rich, short-season side dish.

Why it's made this way: Duruka is a genuine Fijian specialty with a short growing season, and stallholders at the Suva Municipal Market sell it in bundles while it lasts, cooked in coconut cream the way most Fijian households prepare it.
