The humble grilled sausage is such a fixture of Finnish summer life that entire Midsummer bonfire nights revolve around who's manning the grill.

Grillimakkara is a mild pork sausage grilled over open coals or a kiosk griddle and served in a bun or wrapped in foil with mustard and ketchup. It's sold from the same roadside grilli stands as lihapiirakka, and is the default cheap, quick meal at markets, sports events, and summer cottages.

Why it's made this way: Finland's short, intense summer pushes life outdoors, and a sausage that grills fast over an open fire or a kiosk hotplate fits a culture built around campfires, boat trips, and market-square lunches.
