Kougelhopf is a yeasted brioche studded with raisins and whole almonds, baked in a fluted turban-shaped mold and dusted with powdered sugar once cooled. Alsatian bakeries sell it whole for Sunday mornings or in individual rolls at market stalls.

Why it's made this way: The mold shape and enriched dough trace back to Alsace's Germanic and Austrian baking influences, and it remains a fixture of the region's Christmas markets alongside bretzels and knack.
