Bakers pack the dough into small metal rings before baking so it holds a thick, coin-like shape instead of spreading thin like ordinary shortbread.

A palet breton is a thick, disc-shaped cookie made with a high ratio of salted butter, sugar, and egg yolks, giving it a dense, crumbly bite. Market and bakery stalls sell them individually wrapped or loose by the bag.

Why it's made this way: Brittany's coastal dairies produce some of France's most prized salted butter, and this cookie exists mainly to showcase it, unlike the unsalted shortbreads found elsewhere in France.
