Brocciu is technically a whey cheese, made from the liquid left over after other cheeses are pressed, so nothing about it is wasted.

These fritters mix brocciu, a soft Corsican whey cheese, with eggs and a little flour or mint, then deep-fry spoonfuls until puffed and golden. Market and festival stalls serve them hot, dusted with sugar or plain with a squeeze of lemon.

Why it's made this way: Brocciu is central to Corsican farmhouse cooking, and frying it into fritters turned an everyday cheese into festival food.
