It's often flavored with a splash of eau de vie or lemon zest, giving Corsica's answer to cheesecake a distinctly boozy, herbal edge Italian versions don't have.

Fiadone is a dense, crustless cheesecake made from brocciu, eggs, sugar, and lemon zest, baked until the top turns golden and slightly cracked. Bakery counters and market stalls sell it in wedges, often still warm.

Why it's made this way: Like the fritters, it grew from the same brocciu-rich pastoral kitchens, turning an everyday farm cheese into the island's go-to dessert.
