Because fresh brocciu is only made from roughly late autumn to early summer, when ewes and goats are in milk, fiadone was traditionally a seasonal cake.

Fiadone is a dense, crustless cheesecake made from brocciu, eggs, sugar, and lemon zest, baked until the top turns golden and slightly cracked. Bakery counters and market stalls sell it in wedges, often still warm.

Why it's made this way: Like the fritters, it grew from the same brocciu-rich pastoral kitchens, turning an everyday farm cheese into the island's go-to dessert.
