Unlike the light, grid-pattern waffles found elsewhere, the true Lille version is flat and dense, hiding a smooth vanilla-bean filling sandwiched between two thin waffle layers.

Two thin, crisp waffle rounds are pressed together around a smooth vanilla filling, then sold from market carts and bakery windows across Lille, often warmed slightly so the filling softens. It's eaten out of hand, no plate required.

Why it's made this way: Lille's Flemish-influenced baking tradition produced this filled waffle as a market snack distinct from the airier Belgian gaufres just across the border.
