Gaufre de Lille

Unlike the thick grid-pattern waffles found elsewhere, the Lille version is thin and flat, hiding a sweet vanilla filling between two soft waffle layers.

Two thin, soft oval waffles are pressed together around a filling of sugar and vanilla, sold from pâtisseries and bakery windows across Lille. It's eaten out of hand, no plate required.

Why it's made this way: Lille's Flemish-influenced baking tradition produced this filled waffle as a market snack distinct from the airier Belgian gaufres just across the border.
