Despite the name, it has only a loose connection to Welsh rarebit — locals in the Nord adapted the cheese-and-beer toast into their own heartier, ham-topped version and simply kept the name.

Thick toast is topped with ham and a rich sauce of melted cheddar-style cheese whisked with local beer, then broiled until bubbling and often served over more toast with a fried egg and a side of fries. It's a staple lunch at estaminets throughout the Nord.

Why it's made this way: Cross-Channel trade and Flemish beer culture shaped this heavier, local take on British cheese-on-toast, and it became a defining comfort dish of the region known as the Ch'ti.
