Queues outside the most famous falafel counters on rue des Rosiers routinely wind around the block, with regulars debating which shop's version is best as fiercely as Parisians argue about wine.

Fried chickpea balls are piled into a folded pita with red cabbage, hummus, tahini, grilled eggplant, and hot sauce, wrapped in foil and eaten walking through the narrow streets of the Marais. Counters here have served the combination for decades.

Why it's made this way: The Marais has been home to a Jewish community, many with roots in North Africa, since the early 20th century, and their falafel stands turned rue des Rosiers into one of the most famous street-food strips in Paris.
