The rue des Rosiers falafel is usually ordered as a 'spéciale', topped with fried eggplant, and lunchtime queues at the best-known counters regularly stretch down the street.
Fried chickpea balls are piled into a folded pita with red cabbage, hummus, tahini, grilled eggplant, and hot sauce, wrapped in foil and eaten walking through the narrow streets of the Marais. Counters here have served the combination for decades.
Why it's made this way: The Marais has had a Jewish quarter, the Pletzl, since the late 19th century, settled first by Eastern European Jews and later by North African Jewish families, and its falafel stands turned rue des Rosiers into one of the most famous street-food strips in Paris.
