Its wheel-like shape was a deliberate joke — the pastry chef who invented it shaped it after a bicycle wheel to honor a cycling race that passed right by his shop.

Paris-Brest is a ring of choux pastry sliced open and filled with hazelnut-praline cream, topped with sliced almonds and powdered sugar. Pastry shops across Paris sell it whole or as individual rings from the counter.

Why it's made this way: It was created around 1910 by pastry chef Louis Durand near Maisons-Laffitte to commemorate the Paris–Brest–Paris cycling race, whose route passed his shop.
