Legend credits a Norman farmer named Marie Harel with the original recipe during the French Revolution, but the poplar-wood box that let the cheese travel only arrived about a century later, in 1890.

A whole camembert is scored, drizzled with cider or honey, and baked in its wooden box until the interior turns molten, then scooped with hunks of bread or apple slices at market stalls and fair stands. The rind blisters while the center stays soft enough to spoon.

Why it's made this way: Camembert has been made in this corner of Normandy since the late 18th century, and baking it whole turned a table cheese into a shareable market and festival food.
