The name means 'little ears,' because the thin dough puffs and curls at the edges into shapes that genuinely look like they're listening.

Oreillettes are thin sheets of sweet dough, often flavored with orange flower water or citrus zest, deep-fried until they bubble and crisp, then dusted heavily with sugar. Fairground and market fryers turn them out hot in paper bags.

Why it's made this way: They're a Carnival and local-fair tradition across southern France, tied to the pre-Lenten custom of using up eggs, butter, and sugar before fasting season.
