In Vendée dialect it is also called a grâlée or gralaïe, and the village of Les Brouzils holds a Foire à la Mogette every October where producers sell tonnes of the beans.
A thick slice of toasted country bread rubbed with garlic, spread with salted butter and piled with warm, lightly crushed mogette beans, often with a slice of Vendée ham; served at Vendée mogette fairs and village fêtes.
Why it's made this way: The mogette is the Vendée's own white bean, protected as Mogette de Vendée IGP since 2010, and bread-and-mogettes with Vendée ham is the département's best-known pairing.
