It's baked in the same clay tone oven as khachapuri and looks similar from the outside, but crack it open and it's stuffed with spiced mashed beans instead of cheese.

A round or half-moon of yeasted dough is filled with mashed kidney beans seasoned with onion and spices, then baked until the crust is deep golden. Tbilisi bakeries and street kiosks sell it whole or by the slice, often still steaming.

Why it's made this way: Beans were a cheap, filling staple across Georgia's mountainous interior, and stuffing them into the same dough used for khachapuri gave bakers a meat-free, budget-friendly alternative.
