It's nicknamed the "golden pancake" — a nod to the deep yellow-brown color it gets from overripe plantain, and to Ghana's colonial-era name, the Gold Coast.

Overripe, blackened plantains are mashed into a batter with ginger, onion, chili, and a little flour or cornmeal, then spooned into hot oil and pan-fried into small, dense pancakes.

Why it's made this way: Born as a way to use plantains too ripe to sell or boil, tatale turned a kitchen problem into a favorite roadside breakfast and snack, usually paired with fried beans (aboboi).
