Tubaani

It's wrapped and steamed inside the broad leaves of Thaumatococcus daniellii — the same plant whose fruit produces thaumatin, one of the most intensely sweet-tasting natural proteins known.

A paste of ground black-eyed pea or Bambara bean flour is wrapped in large leaves and steamed into a firm, dense pudding, then unwrapped and served with a hot pepper-and-onion oil.

Why it's made this way: Popular among the Dagomba and across Zongo communities nationwide, tubaani turns an inexpensive local bean crop into a filling steamed street food sold by women vendors from covered pots.
