The most famous orange-scented loukaniko actually comes from Mani in the Peloponnese, where the sausages are also smoked over aromatic herbs.

Coarse pork sausage seasoned with orange zest, fennel and dried herbs is grilled over charcoal until the casing snaps, then sliced onto a plate or into bread. A regular sight at Athens' meat-market grill stalls and taverna courtyards.

Why it's made this way: Orange peel and fennel are classic loukaniko seasonings across much of southern Greece, and Athens' grill houses and meat-market stalls serve it as a staple meze.
