Santorini's vines are trained into low, coiled baskets nestled in volcanic ash — a technique that also meant the island's vineyards were never wiped out by the phylloxera epidemic that devastated the rest of Europe.

Assyrtiko is a high-acid, mineral-driven white wine grown in Santorini's black volcanic soil, covering the majority of the island's vineyards. It's served well-chilled alongside seafood and the island's tomato-based dishes.

Why it's made this way: Santorini's volcanic terroir and 3,000-year winemaking history, combined with vines that survived the 19th-century phylloxera crisis untouched, make Assyrtiko one of the most geographically singular wines in Greece.
