The Middle Eastern-leaning mix of fresh mint and cumin is what sets Rhodes' chickpea fritter apart from the drier versions found elsewhere in Greece.

Soaked and mashed chickpeas are mixed with grated tomato, onion, mint and cumin, loosely bound with flour, then shaped by hand and deep-fried until golden and craggy outside, soft within. Sold hot from market stalls in Rhodes Old Town, often with a tahini sauce for dipping.

Why it's made this way: Rhodes' position on old Eastern Mediterranean trade routes shows up directly in the fritter's mint-and-cumin seasoning, closer to the eastern Aegean and Middle East than the chickpea fritters found on the Greek mainland.
