The plant's Greek name, Sideritis, comes from 'sideros' (iron) — old folk tales say soldiers used it to treat wounds from iron weapons after battles fought in the Pindus mountains.
Mountain tea is a golden herbal infusion brewed from dried Sideritis flowers and stems, gathered wild from high rocky slopes. It has a mild, slightly floral and honeyed flavor and is traditionally drunk hot, often with a spoonful of honey, especially in colder months.
Why it's made this way: Epirus's stretch of the Pindus mountain range — Greece's rugged spine — is one of the plant's key wild habitats, and mountain villages there have gathered and dried it by hand for generations as both an everyday drink and a folk remedy.
