Mandolato

Its name comes straight from the Italian word for almond, mandorla — one of the clearest traces Venetian rule left on Corfu's sweet shops.

Egg whites are whipped into a stiff meringue with honey and sugar, then folded with roasted almonds and set into a soft, chewy nougat bar, cut into slices and wrapped for sale. A fixture of Corfu Town's confectionery shops and market stalls.

Why it's made this way: Venice ruled Corfu for over four centuries, and mandolato — a favorite sweet of the Venetian aristocracy — became one of the island's own once local confectioners adopted it, unlike almost anywhere else in Greece.
